Lovely Local Steamed Egg with Veggies

Farm fresh,free range, local, organic eggs are a treat to taste.

Pan-fry the red peppers, onions, celery and black kale (the kale stem becomes soft when cooked this way, no need to cut out the stem) until almost tender.  Create a divot in the centre of the veggies, gently break an egg or two in the divot, cover the pan, add a teaspoon of water and steam the egg to perfection. Season to taste.
